8-Year-Old Heart Patient Hosts Joyful Pickle Party at Hospital

When Bayse, an 8-year-old heart transplant candidate, began craving the tangy crunch of pickles, the team at Boston Children’s Hospital decided to turn her craving into a delightful experience.

Her fascination with pickles began as she prepared for her procedure, a common response among cardiac patients on fluid restrictions.

Bayse, who started her treatment at home in Medway, Massachusetts, became an inpatient at the hospital in June.

She soon met Sarah Bryce, the chef and program manager of culinary services at the hospital.

Bryce, who is known for creating engaging food experiences for patients, saw an opportunity to bring a bit of joy into Bayse’s hospital stay.

“I’ve done pizza, which is probably the most asked for and the one I do the most,” Bryce shares.

She adds, “I’ve worked in these rooms and I’ve seen what a difference it is for a child to eat — just trying to get them to eat something.”

Emails from Bayse’s doctors and caretakers informed Bryce of the young girl’s pickle passion.

So, Bryce proposed a pickling activity, asking Bayse if she knew how pickles were made.

“She said, ‘No! I would have never thought about it,’ and I said, ‘What if we made some together?’” Bryce recalls.

Three days later, Bryce arrived with a refrigerator-stable recipe, ready to create pickles in Bayse’s room.

Together, they crafted seven varieties, including cucumbers, garlic, onions, and even watermelon.

“She loves Ken’s Italian Dressing; we made a pickle with those,” Bryce notes.

The pickle-making session culminated in a lively pickle party where hospital staff joined in to sample the creations.

“The pickles were gone,” Bryce says. “All of them.”

Bayse guided guests in selecting which pickles to try, proudly serving her pickle juice ice cubes with lemonade.

“It was the best two hours of my life,” Bryce reflects on the event.

Bayse’s mother, Allison, appreciates the hospital’s efforts to make her daughter’s experience enjoyable.

“The fact that they’re so supportive of just knowing what the kids are interested in and like to do and then just going with that idea, they’ve really normalized the experience for Emerson here at the hospital,” she shares.

Beyond pickling, Bayse continues to spread cheer throughout the hospital.

Her nurses and doctors have dubbed her the “unit magician,” as she performs magic tricks under the name “The Magnificent Cardio.”

“She’s modeling from these adults their care and interest in her, and she’s taking that and trying to give it back to the other kids here in the building,” says Bayse’s mom.

When asked what she would pickle if anything was possible, Bayse enthusiastically replied, “Ketchup!”

Meanwhile, the staff expressed a wish to preserve Bayse’s magical spirit.
