Chi-Chi’s, a cherished Mexican restaurant chain, is returning after two decades with a new flagship opening in St. Louis Park, Minnesota on October 6, 2025.

The relaunch is led by Michael McDermott, son of the original founder, thanks to a new agreement with Hormel Foods, which owns the chain’s trademarks.

The flagship will open at 1602 West End Blvd, St. Louis Park, with updated interiors and a welcoming atmosphere designed for families, friends, and food lovers.

Minnesota holds a special place in Chi-Chi’s story, as it was founded in Richfield, Minnesota in 1975 by Marno McDermott and former NFL player Max McGee.

Chi-Chi’s once grew to over 200 locations nationwide before closing in 2004.

The new menu features beloved classics such as the Original Chimichanga, Quesabirria Tacos, Seafood Enchiladas, Manchego Burger, Nachos Grande, and El Burro Con Queso, along with an upgraded bar and enhanced service.

The St. Louis Park location will be the first as Chi-Chi’s returns, with additional restaurants planned for the future.

It’s a moment of celebration for fans eager to rediscover the flavors and hospitality that made Chi-Chi’s memorable.
