Growing up in a small Mexican village, a young boy worked the fields with his father, learning the value of hard work and the importance of family. Despite challenges like drought and economic struggles, his family’s love and resourcefulness meant he never went to bed hungry.

He fondly remembers the warmth and ingenuity of his grandmother, whose simple yet delicious meals brought everyone together. Her corn dough balls and homemade mole left an unforgettable mark, representing the heart of home.

At fifteen, he joined other youths from his hometown on a difficult journey across the border, motivated by hope for a brighter future.

“It’s like an adventure, like in the old movies, the Westerns — you are walking over hills, through the dry land, you are in danger, they might get you, there are cacti shaped like humans raising their hands, it’s hot during the day and cold at night.”

Arriving in New York, he aspired to become a cook, inspired by family tradition and the desire to grow. Though his journey included jobs outside kitchens and learning English through cartoons, his determination never wavered.

Eventually, he found his way to restaurant work, proud to start with the basics and work his way up, fueled by the tastes and love of his childhood home.
